Gefüllter kürbis / Stuffed Pumpkin

Herbst ohne Kürbis geht einfach echt nicht. Ich hoffe ich langweile euch nicht mit meiner Flut an Kürbis-Rezepten. Vor kurzen hat es bei uns in einem Lebensmittelgeschäft ganz kleine Tiroler Hokkaidos gegeben (der Kürbis ist auf einem Dessert Teller angerichtet). Da kam mir die Idee sie zu Füllen und das hat super Funktioniert und echt lecker geschmeckt. Und weil mir gerade danach war, hab ich noch ein Gesicht reingeschnitten :) manchmal muss man sein inneres Kind befreien :D


Zutaten für 2 Personen:

2 kleine Hokkaido Kürbisse
1 Tasse Couscous
220g Rindsfaschiertes (Gehacktes) 
1 Schalotte
1 Knoblauchzehe
1 Tomate
2 EL Ras el Hanout
1 EL Paprikapulver
Salz

Zubereitung:

Den Kürbis oben aufschneiden und aushöhlen.
Den Couscous kochen. Die Schalotte und den Knoblauch fein schneiden und in einer Pfanne anschwitzen, das Fleisch mit anschwitzen und auch den fertigen Couscous mit anrösten. Mit den Gewürzen abschmecken und die klein geschnittene Tomate untermischen. Die fertige Fülle in den Kürbis füllen und den Kürbis bei 180° Ober- und Unterhitze ca. 30 min in den Backofen geben.
Ich habe den Kürbis mit Hummus, Granatapfel Kernen und Pistazien gegessen. Das Rezept für den Hummus findet ihr hier. 


Autumn without pumpkin is simply not autumn. I hope you are not bore with all my pumpkin recipes. Today i found some very small tyrolean Hokkaido pumpinks in the grocery store  (the pumpkin is served on a dessert plate). So I had the idea to stuff them and it worked great and tasted really delicious. And i cut a face into the pumpkin :) sometimes you have to release your inner child :D

Ingredients for 2 people:

2 small Hokkaido pumpkins
1 cup Couscous
220g beef mince
1 shallot
1 clove garlic
1 tomato
2 tablespoons Ras el Hanout
1 tablespoon paprika
salt

Preparation:

Cut the lid off the pumpkin and scoop out seeds.
Cook the couscous. Cut the shallots and the garlic finely and sauté it in a frying pan, add the meat and couscous. Season with the spices and add the chopped tomato. Fill the finished stuffing in the pumpkin and put the pumpkin for about 30min in the oven (at 180 ° upper and lower heat)
