Kartoffel-Buttermilch-Sauce / Potato-buttermilk-sauce

Spring is asparagus time. We love asparagus! Asparagus is often combined with hollandaise sauce. Sauce hollandaise is a true calorie bomb and I just do not like it.
That's why I like to combine asparagus with my potato buttermilk sauce :) It's quick and easy and a healthy alternative.

Ingredients for the sauce:

2 medium boiled potatoes
100 ml of potato water
100 ml buttermilk
Coriander seeds
Caraway seed
cumin
salt

Preparation:

Puree all ingredients to make a creamy sauce. Season with the spices as you like. If the sauce is too liquid just add a potato.

The sauce tastes wonderful with fish too :)

Scharfes oranges curry / spicy orange curry

I love curry because of several reasons: 1st. it is always tasty, 2nd. you can vary the spices, 3rd. it is a fast dish and 4th. you only need one pot, so it is little to clean off ;)
Curry is also great for the leftover. simply cut your leftover vegetables and meat, fry them make a sauce, and call it curry ...  in my opinion it sounds much better than "stew".
Here is my recipe for a spicy orange curry:

Ingredients:

500g chicken
1 onion
1 clove of garlic
1/2 yellow peppers
1/2 red peppers
2 carrots
200ml chicken broth
1EL turmeric
1 tablespoon Tandori spice mixture
1 tablespoon spicy Curry
Ginger to taste
Sauce thickener

Preparation:

Chop the chicken, peppers, carrots, onion, garlic and ginger. In a little oil fry the spices, the onion, garlic and ginger, then add the meat and also fry briefly. Then add the peppers and the carrots and pour in the chicken broth. Let it simmer as long as the vegetables are soft and the meat ready. Add the sauce thickener.
I had my curry with quinoa, but it rice would be great too. You can add some chickpeas to the curry.

Spaghettikürbis mit Huhn und Brokkoli / Spaghettisquash with chicken and broccoli

On the Internet, I saw so many pictures and recipes of spaghetti squashes. I really wanted to try spaghetti squash.  Unfortunately, it is not that easy to get one. Recently I had luck :) I have to say: extremely delicious :) there will surely be back soon :)

Ingredients:

1 Spaghetti squash
300g chicken breast
1/2 broccoli
250ml of milk
1 clove of garlic
1.5 tbsp flour
coconut oil
Salt, pepper, nutmeg

Cheddar to bake

Preparation:

Cut the spaghetti squash into half (for this you will need a big, sharp knife).
Tip: it is easier if you pick the pumpkin skin with with a fork and place the pumpkin in the microwave for 3 minutes.
Sprinkle with some coconut oil, add salt and pepper and place at 220 ° in the oven. The pumpkin needs about 30-40min until it is soft, depending on the size.
Cook the broccoli in salt water.
Cut the chicken breast, season with salt and pepper. Fry the garlic in a little coconut oil and add the chicken. Dust with the flour, pour in the milk and stir well, simmer until a creamy sauce is produced. Season with salt, pepper and nutmeg. Add the boiled broccoli.
If the pumpkin is soft shred the flesh with a fork. Spread the sauce with the broccoli and the meat over it, sprinkle with cheddar and bake over.

Pumpkin Spiced Latte

Zutaten:

100 ml Milch
1 Starker Kaffee
1 EL Kürbis (püriert)
Zimt, Muskat, geriebener Ingwer
Süßmittel nach Wahl

Zubereitung:

Autumn time is pumpkin time and - yes - I'M ADDICTED to pumpkin. So why not drinking them? :) In this drink are combined 2 of my favorite things: pumpkin and coffee. S For me definitely an alternative for something change.

Ingredients:

100 ml of milk
1 Strong coffee
1 tbsp squash (pureed)
Cinnamon, nutmeg, grated ginger
Sweetener of your choice

Preparation:

Milk the milk with a milk steamer. Season the pureed pumpkin with some nutmeg and cinnamon and ginger, add the coffee and the milk and stir everything.

I always cook a pumpkin and purge it. The pumpkin pudding can be frozen or processed immediately: e.g. Pastasauce, pumpkin ice cream, pumpkin cupcake, or pumpkin porridge. Follow the link to the recipes.

Shepherd's Pie

Zutaten:

500g Rinds- oder Lammfaschiertes
100g Sellerie
250g Karotten
150g Erbsen
1 Zwiebel
500ml Rindsuppe
1EL Tomatenmark
4EL Worcestershiresauce
Salz, Pfeffer, Rosmarin
Saucenbinder

1 Blumenkohl
Salz, Muskatnuss
Cheddarkäse

Zubereitung:

Zwiebel, Sellerie, Karotte in kleine Würfel schneiden.

Ireland is one of my most favorite countries in the world! Two years ago I cross out one point on my bucket list and traveled across Ireland with my boyfried - it was certainly one of the best times of my life so fare! I would do it again right away :)
On this holiday we have also eaten Shepherd's Pie. To bring back a little Ireland fever I made a low carb shepherd's pie. This is a super practical dish, I completely prepared it the night before and put it in the oven the next day on which i war very busy.

Ingredients:

500g beef or lamb minced meat
100g of celery
250g carrots
150g peas
1 onion
500ml beef stock
1EL tomato paste
4EL Worcestershiresauce
Salt, pepper, rosemary
sauce thickener

1 cauliflower
Salt, nutmeg
Cheddar cheese

Preparation:

Cut the onion, celery, carrot into small cubes. Fry it in pan, add 1 tbsp of tomato paste and the meat. Add the beef stock and simmer about 10 minutes (until the celery and the carrot are soft). Season with salt, pepper, Worcestershiresauce and rosemary thicken with sauce thickener.
Boil the cauliflower and mash until it becomes puree. Season with salt and nutmeg.
Put the meat into a casserole, spread the cauliflower puree, that everything is covered.
Bake in the oven for 20 minutes at 180 °. If you like you can cover with Cheddar before putting it into the oven (unfortunately I had none at home;) but I'll definitely add Cheddar next time!)

It is very quiet on my blog at the moment ... but why?
I have changed my job and now I work 40h/week in a rehabilitation center as a psychologist. This job is VERY VERY cool and i enjoy it a lot. And I am also doing an additional education which is on many weekends. Unfortunately, I do not have the time to cook, photographing or post anything...
BUT I would like to continue  so this time a short, simple recipe, which still SUPER tasty :)

Zutaten:

1 Zwiebel
2 Knoblauchzehen
1 Zucchini
1 Aubergine
2 Paprika
1 Dose gestückelte Tomaten
1 Dose Kirschtomaten oder frische Kirschtomate
Salz, Pfeffer, Thymian, Rosmarin

2 Zucchini zum Füllen, wer mag 1 Mozzarella zum überbacken

Zubereitung:

Ratatouille is a great summer recipe. It is also super to fill it in anything;) e.g. Zucchini. But you can also eat it with a bit grated parmesan. So here you have a simple quasi 2 in 1 recipe.

1 onion
2 cloves of garlic
1 zucchini
1 aubergine
2 peppers
1 tin pieced tomatoes
1 can of cherry tomatoes or fresh cherry tomatoes
Salt, pepper, thyme, rosemary

Cut the vegetables for ratatouille into small cubes. Fry the onion and peppers in a pan. Add the rest of the vegetables and fry everything. Add the canned tomatoes including juice and leave to simmer until all the vegetables are soft. Season with salt, pepper, thyme and rosemary.

Scoop out the zucchini and fill the Ratatouille. Top with mozzarella and bake in oven about 15 minutes.

Spinatomeletten / Spinach filled Pancakes

250g Dinkelmehl                                         500g SPinat
1/4 l Mineralwasser                                     1/2 Zwiebel
1/4 l Milch                                                   2 Knoblauchzehen
2 Eier                                                           100 ml Gemüsesuppe
etwas Salz                                                    Salz, Pfeffer
Käse nach Wahl (ich habe Feta genommen)

Zubereitung:

When we were kids the favorite food of my brother was "Spinatomeletten" - spinach filled pancakes. I also liked it very much. Previously, there were always filled with creamy spinach and Emmental cheese. Today I modified the recipe, but both versions taste really very good.

Ingredients for omelets:                  Ingredients for the filling:

250g spelled flour                                       500g spinach
1/4 l mineral water                                     1/2 onion
1/4 l milk                                                    2 cloves garlic
2 eggs                                                         100 ml vegetable soup
some salt                                                    salt, pepper
Cheese of your choice (I took Feta)

Preparation:

Finely cut onion and garlic, fry in a little oil, add spinach, add the vegetable soup and season with salt and pepper and stew.
Mix the ingredients for the omelettes to a smooth dough. Put some oil in a pan, spread so much dough into the pan that the bottom is thinly covered. Fry the omelettes on both sides until golden brown.
Spread the spinach and cheese on top and roll up. You can also grate some some parmesan on it.

Veganer Karottenkuchn / vegan carrot cake

Zutaten:                                         Zitronenglasur:

200g Mehl                                               100g Staubzucker
180g Zucker                                             3 EL Zitronensaft
100g geriebene Karotten
200g Soja Vanille Joghurt
100ml Öl
1 Päckchen Vanillezucker
1 TL Natrol
1 TL Backpulver
1/2 TL Zimt
1/2 TL Kardamom
1/2 TL Salz

Zubereitung:

First time i ate this cake was when a friend baked it. I didn't know that it is vegan. I was simply amazed because it was so juicy and fluffy. So even for non Vegan people it is worth trying it.

Ingredients:                                    lemon icing:

200g flour                                                 100g icing sugar
180g sugar                                                3 tbsp lemon juice
100g grated carrot
200g soy vanilla yogurt
100ml oil
1 tbsp vanilla
1 tbsp Natrol
1 tbsp Baking powder
1/2 tbsp cinnamon
1/2 tbsp cardamom
1/2 tbsp salt

Preparation:

Preheat the oven to 180°.
Mix the dry ingredients in a bowl. In a second bowl combine the grated carrots, yogurt and the oil and stir well. Mix the contents of both bowls together, thereby do not using a mixer! Fill in a greased baking dish and bake about 30-35min.
For the lemon icing mix the lemon juice with the icing sugar and pour over the cooled cake.

Rhabarber-Erdbeer-Kompott / rhubarb-strawberry-compote

Spring is rhubarb time. Rhubarb is super healthy, it has a lot of important vitamins and minerals, it is rich in iron, potassium, magnesium, vitamin C and vitamin K. In addition, it has low calories, low in fat and has a dehydrating effect. Most people include rhubarb to fruit, but actually it is a vegetable. I like him especially because of its sour taste. But because of that you should be careful with the sugar :)

Ingredients:

500g rhubarb
150g strawberries
1 lemon
1 cinnamon stick
2 cardamom pods
4 cloves
Sweetener of choice and taste

Preparation:

Cut of the end of the rhubarb sticks, peel and it cut into large pieces. Fill as much water it a pot that the pieces are covered. Add lemon juice and spices and simmer 5 minutes till the rhubarb is soft. In the meantime cut the strawberries into pieces, add them to the soft rhubarb and let it all  draw 2-3 minutes. After this add sweetener of choice and tast. Fills it still hot in glasses, it keeps well in the refrigerator for several days. I especially like it with yogurt or Nice-Cream (this way to the recipe) :)
