Zutaten für die Sauce für 2 Portionen:
Soon summer is coming. When it is hot, I'm not in the mood to eat heavy. My boyfriend loves creamy sauces with his noodles. For this reason, I came up with this light summer pasta with fresh vegetables. We enjoyed it.
Ingredients for the sauce for 2 servings:1/2 eggplant
1/2 yellow bell pepper
1/2 red bell pepper
1 clove of garlic
1 tsp butter
2 tbsp (glutenfree) flour
1 1/2 cups milk (for a vegan version: soy)
1/2 cup water
1/2 cup Parmesan (omit for vegan version)
Nutmeg, salt, pepper
Preparation:Cook the pasta of your choice.
Cook the broccoli in lightly salted water. Chop the eggplant, peppers, garlic, rosemary and fry in a pan. Mix the chopped tomato and fresh basil before serving.
In a saucepan, melt the butter, add the flour, and let it fry briefly and pour the milk and water. Boil the sauce briefly with constant stirring until it binds. Stir in the grated Parmesan cheese, season with salt, pepper, nutmeg.
Serve the cooked pasta with the sauce and spread the vegetables on it.
If you like you can also add chicken.
